gf/cf update


Yay! We found dairy free ice cream he loves. It's called So Delicious.


Some of his staple meals:

eggs

gf/cf donuts, waffles w/ pb, french toast sticks

gf/cf banana muffins homemade (recipe to come)...

panda puffs cereal

baked chicken

sausage

ham steak with gf toast and jelly

More veggies than usual- hooray!

Natural popcorn (Costco carries some!)

tons of fruit

hot dogs w/o the bun

pork

still working on rice- he has never liked the texture so it's going to take time for this one


This is so much more variety in his diet than he used to have. It's awesome to see him expand his tastes and I was not expecting that to happen so fast. He has been pretty picky and it's nice to see a few new things plugged in each week.


The hard part was telling him we couldn't just go for pizza. That was his favorite. He has handled this new diet so well it's inspiring. We eat a lot less fast food and when we are in a crunch and need to, I order him a plain grilled chicken sandwich without the bun and he loves it. Each week we learn more and find new things we might not have tried before and he keeps amazing me with his ability to go with the flow. Luckilyhe is doing well taking his supplements with grape juice and asks for them if I am a minute late on them.

Autism


So. My 5 year old son got diagnosed with Autism this past school year. And we are giving a change to his diet a chance by going gluten-free and caisin-free to see if it positively impacts his health and behavior. It's incredibly challenging to find food he likes, but this blog will help me catalog the adventure.


Today:


Namaste makes a good gf/cf waffle/ pancake mix. We add fruit on the side. In addition to his omegas and multi-vitamin.

gf/cf pretzels are a good snack. but he hates them. :( might need to find some dark chocolate to melt and drizzle on them.

chicken noodle soup made from scratch for lunch (canned chicken, gf noodle and gf bullion).

gf/cf cookies have been nice to have on hand for eating bribery.
Soy cheese was a total flop.

Bananas fill in the gaps for this boy during the snack time. Or pineapple.
Tonight is baked chicken with edemame and brown rice.

The dad in the family is celiac and is why this blog initially existed. Now my son's diet and my daughter's egg allergy has truly made my life a food science exploration.
ps. Cherrybrook Farm makes an excellent cake and frosting mix my WHOLE family can eat as long as you use margerine without whey (has milk in it) for the frosting.
