gluten-free meatballs



gluten-free meatballs


1 lb ground beef (or ground turkey)

1/2 to 1 cup corn meal

2 eggs

about 2 tablespoons Italian seasoning


In a large bowl beat the eggs and add uncooked ground beef into bowl. Mix well with hands. Add corn meal to desired consistency, I like it to stick well together. Add seasoning and mix well with hands again.

Roll them into 1 inch balls and place in fry pan lightly greased. I found it best to cook them as if they are triangles, flipping them from one of three sides over and over once browned using tongs. Serve with gf spaghetti and I enjoyed it this week with my homemade tomato sauce. Yummy!

  1. MMMMMM....now I need to make meatballs! :D So good. They are good in sauce on a Kinnickinnick Hamburger bun with provalone cheese, too. :D Just an idea! :D

  3. I made this tonight for FIL to go in Sweet and Sour meatballs and everyone said how good they were! I didn't taste one... guess I should have! But he was so happy- he's like, "I see spaghetti and meatballs in my future!!"

  4. Thanks for the recipe. I was recently advised I couldn't have sugar, gluten, corn syrup and about a million other things. The family was having meatballs that had all kinds of things I wasn't allowed and I needed meatballs. So this blog came up in my Google search and the meatballs turned out great! I'm starting a new blog about my yeast-free journey-hope you don't mind if I put a link to this recipe in my blog. If you do, let me know and I will remove it.
