Lemon Bars


Gluten Free Lemon Bars

Shortbread crust:
1 cup rice flour
1/2 cup cornstarch
1/2 cup powdered sugar
3/4 cup butter or margarine


Lemony curd filling:
4 eggs
2 cups sugar
2 Tbsp rice flour
2 Tbsp cornstarch
1/4 cup lemon juice
1 tsp lemon peel
powdered sugar

Cut butter into the dry crust ingredients, until you have a something similar to cookie dough. Pat into bottom of a 9x13 pan. Bake at 350 for 17-19 minutes. Let cool.

Beat eggs. Add sugar, rice flour, cornstarch, lemon juice, and lemon peel. Whisk until smooth. Pour over crust and bake at 325 for 20 minutes or until filling is set. Dust with powdered sugar.

I tried a recipe for lemon bars a few weeks ago and was so disappointed. This is a basic recipe, but a winner. The crust is flaky and the filling lemony. They are very sweet and tangy, so cut into small pieces. The filling is meant to be like lemon curd, so it will need to cool before you can cut it or it will fall apart. I even chilled mine, just because I like it that way. I am going to use this crust for other recipes too, because it is so easy and really, really good.

MMM...you two are making me want to convert to gluten free, everything looks and sounds so delish on this blog. I tried making the taco salad with Ro-Tel and it was good, I had never thought of using that for anything besides that cheese dip. Good going.

Jenni-Yeah about the Rotel! I use those little cans for many things, one being an enchilada recipe I'll be posting soon. It's a regular recipe, just using homemade gluten free cream of chicken soup instead of canned.

Kristy-I too am a huge fan of lemon desserts! I have an awesome fruit salad recipe using lemon curd and there is a box of gluten free lemon cake mix you can buy at Sprouts that is absolutely YUM from a company called Sylvan Farms. And if you were to get really adventurous, I have a pie using a meringue crust with a lemon whip cream filling that is absolutely heavenly. I'll have to get posting.
What an awesome friend you are! It always makes my day when one of my friends goes out of their way to make sure there is gluten free food for me. Awesome!

I love lemon bars, and my wife created a really wonderful lemon-bar recipe she put in our gluten-free desserts book. I guarantee that if you want a gluten-free lemon bar that's as good as any "normal" (gluten-containing) ones, it's a recipe worth trying.

thanks for a great website! awesome recipes! i do have a quick question though...Melanie-did you have signs of severe indigestion when you discovered your gluten intolerance? I used to have really bad stomach aches, and then after i had my daughter, it turned into really bad indigestion. is this gluten intolerance or something else? i would like to know your opinion.

My office celebrated one of my co-workers' birthdays today, and lemon bars were the "cake" choice. Of course, being GF, I had to just sit and stare, and then got a serious craving for the lemony goodness. I immediately Googled gluten-free lemon bars, and am so happy I found your blog. I googled GF lemon bars a couple of weeks ago and I just made them tonight. They are the best lemon bars that I have ever had!! The crust is delicious and perfect. I am going to make these for my office as well. DEFINITELY recommend for the lemon bar lover!!

these were great! my one year old tested as sensitive to gluten so we are on a GF diet to see if it clears up his skin issues. this recipe makes it so much easier :) i made it in a 9 inch springform and only made half the lemony filling. we all loved it!

These are some of the best lemon bars I have ever had. My father a true skeptic of ANY gluten free food also agreed they were the best he had ever had. I have made these twice and they turned out fantastic. The second time I made them I increased the lemon curd to 1 1/2 the recipe and think they were even better. Enjoy! Thank you for making gluten free not taste as bad : )
