When I put together a 72-hour emergency food kit for my Celiac husband this will be included. De Boles Rice Pasta and Cheese is not a product he craves, but it's a nice thing to have on hand. This would replace a regular box of mac n' cheese. We feel one box is only enough of a portion for one adult lunch serving.
I am interested in what you put into your 72 hour kit...I'm stuck as to what to put into mine. Thanks so much for telling other celiacs about this! I have truly unhealthy stuff in my 72 hour kit because I couldn't find anything GF to go in there. I have eaten debole's GF spaghetti before, my family loves it and accused me of using regular sphagetti :) Now I will ask my grocery store to stock some of the mac and cheese!!
This Mac & Cheese is delish. My husband is allergic to Gluten as well and we actually found a company who was willing to customize our food storage and 72 hour kits to be completely gluten free. You do have to specially request this as it is not usually offered but they were so great to work with. I believe the company is called Food For Health International. It's the same food storage brand that sells currently in costco, they are located in Utah and will ship anywhere for cheap.
I knew something was up during my 2nd pregnancy. About 2 years and a battery of up-close-and-personal tests later, my GI guy gave me the news over the phone, Celiac Disease. Umm, What? Over the past 5 years I've researched and come to understand what gluten-free means and how I can live a healthy life without. In my house of 6, I'm the only *special* one, for now. This is what we eat. Most of it is simple. All of it is tasty. Enjoy.
Once upon a time I married a swell guy (Melanie's brother) and one day a Doctor discovered he has Celiac Disease. While his only grumble was not being able to eat Krispy Kremes, I have since determined we will have yummy meals. I revise my favorite recipes and try new ones that catch my interest so our eating experience can be as *normal* as possible. The guy is still swell, in fact, even more swell now that his intestines are intact.
Please remember to follow the celiac diet regiments your Doctor has reviewed with you. Our recipes are a rough guide we follow according to our interpretations of a GF diet; we are not Doctors.
