Bread

Since opening up kill.the.gluten in April of 2007, we have gotten well over a dozen emails asking us about bread. How to make it, special tips, and guidance. I am honest to say I will never be an expert on making bread. I buy gluten-free bread from Whole Foods. I am a bit of a cheater that way. Maybe someday I will have the desire to tackle such a feat. And when I do, I will check out this excellent post about making bread over at gluten a go go.

So those of you yearning to make bread, give her site a go!

Prairie Bread





Mike in California told us about this Prairie Bread from Whole Foods. Apparently, it's the best GF bread he has ever eaten. He put turkey, alpine swiss, and tomato between two toasted pieces. Mayo, pepper, and parmesan cheese cover the insides of the toasted bread.

Banana Bread/ Muffins


Cream:
1 stick butter
1 & 1/3 cup sugar

Add:
2 eggs
1 teaspoon GF vanilla

Sift, then add:
1 & 1/2 cup rice flour
1/2 cup tapioca flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt

Mix together and add:
3 ripe bananas mashed
1 cup plain yogurt or sour cream
1 cup nuts if desired
chocolate chips if desired

Pour into greased loaf pan or muffin pan.
Bake 350 degrees for 45 mintues for loaf, 15 minutes for muffins (10 minutes for mini muffins- those are the ones in the photos).

The trick for me is having sour cream and bananas on hand at the same time- the rest is almost always in my pantry. These come out flat as muffins, but taste nice and moist.

Kinnikinnick Sunflower and Flax Bread Mix

I received this mix as a gift and put off trying it. I shouldn't have. The Kinnikinnick brand consistenly makes awesome gluten free products, which I have started finding in my area health food stores, like Whole Foods and Sprouts. You can also order directly from their website.



This mix can be made into muffins or bread loaves. The finished product has a texture similar to regular whole grain bread. It's a little sweet, but so tasty. I like the fact that you don't have to use the whole package at once. It even has directions for just one bun. The only thing I don't love about the Kinnikinnick brand is the instructions. They are somewhat vague. And the cooking time is not nearly as long as it instructs. Check out their website for directions that are a little more in depth.
All in all, I highly recommend this bread mix, especially for those in dire need of a bread product that actually tastes like real bread.
