Breakfast for dinner

I didn't have time to take a picture of our dinner last night, mainly because of the gigantic hurry we were in to make it, scarf it down, and get out the door to softball. But this is what we have for dinner usually every other week.

Breakfast

This can take on many forms. Last night it was fried eggs, hash brown potatoes, and sausage links(Jimmy Dean). It took all of 20 minutes to make. Perfect for those busy nights.

Sometimes we make gluten free pancakes or waffles from a mix. Some nights we have omlettes. My kids especially love french toast, and I use store bought gluten free bread for mine (Ener-G is awesome). And of course, when we are really in a rush, cereal. Add some fruit and a glass of milk and you have a healthy, easy meal. And the kids think it's so much fun.

Would I do this every night? Of course not, but on nights when there just isn't time for dinner, make breakfast. Do you ever do this? What do you make? I'd love to hear your ideas.

yes! we do this all the time.

our weeknight breakfasts are usually hash browns, fried eggs, and GF pancakes or waffles (recipe post to come in the future...)

Waffles! That's what we have for dinner sometimes..with strawberries and whip cream! Only problem is my waffles are not gluten free...it is a danish recipe passed down from generation to generation. If you have any recipes for good gluten-free waffles...please do tell! My husband and son will thank you(although they love my waffles but pay for it later!poor guys;)

We do breakfast too! We do breakfast burritos alot. Scrambled eggs with bits of bacon and cheese laid down the middle of a corn tortilla which I spray pam on and heat in a frying pan then roll them up. They are good when we are really in a hurray because you can roll them in a paper towel and take with you! Hope that made sense, I heat the tortilla first then add other ing and roll.

laura- my husband is the KING of gf waffles, I will put him to work on it this weekend for you.

Also, the best frozen gf waffles seem to be the trader joe's, but another alternative is the brand Van's GF waffles, in the organic freezer section of regular grocery stores or even at whole foods.
